Honey oat breakfast loaf

A lightly sweet, oaty loaf made with honey — lovely toasted and spread with a little butter and extra honey.

A simple, wholesome loaf that fills the kitchen with the smell of honey and oats. Makes one 900g loaf.

Ingredients

  • 250g self-raising flour
  • 100g rolled oats, plus extra for the top
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 tbsp honey
  • 1 large egg
  • 250ml milk
  • 50g butter, melted

Method

  1. Heat the oven to 180°C (fan 160°C) and line a 900g loaf tin.
  2. In a large bowl, mix the flour, oats, baking powder and salt.
  3. In a jug, whisk together the honey, egg, milk and melted butter.
  4. Pour the wet ingredients into the dry and stir just until combined — don't overmix.
  5. Spoon into the tin, level the top and scatter with a few extra oats.
  6. Bake for 40–45 minutes, until risen and a skewer comes out clean.
  7. Cool in the tin for 10 minutes, then turn out. Lovely toasted with butter and a drizzle of honey.
